What do I need?

  1. Onion

  2. Green peppers

  3. Mushrooms

  4. Eggplant

  5. Green Onion

  6. Asparagus

  7. Tofu

  8. Carrot

  9. Salt

  10. Coconut Oil

How do I make it?

  1. Dice and slice your all of your veggies 

  2. Take a pan and pour 1 tbsp of coconut oil and heat it on medium flame

  3. Add onions and green peppers and sautee on medium flame till they are golden. 

  4. Now add mushrooms and sautee till mushrooms start to turn brown. First they will lose water then they will turn brown

  5. Finally add eggplant, carrots and asparagus and stir well. Cook till all the veggies are well cooked (about 25 mins)

  6. In the meantime take a separate pan and add 1/2 tbsp of coconut oil and heat it on medium flame

  7. Add tofu to the pan from step 6 and cook on medium flame. Flip the tofu around every 5 mins. Cook for a total of 15 mins

  8. Once tofu is done move it to the pan from step 5

  9. Serve your grilled veggies and tofu with cauliflower rice (See Recipe) and Love.
