How do I make it?

Dice the onions and garlic

Take a deep pan and melt 1 tbsp of ghee on medium flame

Sautee the onions in the pan till they turn a little brown. This would take about 5 mins. Then add garlic and cook till they are fragrant - about 3-4 mins

In the meantime, wash the asparagus well. Chop them into small pieces I also end up using the 1 inch of the stem from the base of stem They have a lot of minerals and vitamins

Now add the asparagus salt and pepper to the pan from step 3 and mix well. Keep the flame medium-low and cover the pan with lid

Keep stirring and cooking till your asparagus gets cooked and super soft. If the mixture gets too dry add a 2 tbsp of water and cover with lid to cook

Once cooked tunr the flame off and let the content of the pan cool down completely

Move the contents into a blender and blend on high speed. Till contents have the consistency of soup

Serve your asparagus soup with 1 tsp of extra virgin olive oil or ghee, some garlic bread (See Recipe) and Love
