What do I need?

  1. Asparagus

  2. Onion

  3. Garlic

  4. Ghee (clarified butter)

  5. Salt

  6. Pepper

How do I make it?

  1. Dice the onions and garlic

  2. Take a deep pan and melt 1 tbsp of ghee on medium flame

  3. Sautee the onions in the pan till they turn a little brown. This would take about 5 mins. Then add garlic and cook till they are fragrant - about 3-4 mins

  4. In the meantime, wash the asparagus well. Chop them into small pieces I also end up using the 1 inch of the stem from the base of stem They have a lot of minerals and vitamins

  5. Now add the asparagus salt and pepper to the pan from step 3 and mix well. Keep the flame medium-low and cover the pan with lid

  6. Keep stirring and cooking till your asparagus gets cooked and super soft. If the mixture gets too dry add a 2 tbsp of water and cover with lid to cook

  7. Once cooked tunr the flame off and let the content of the pan cool down completely

  8. Move the contents into a blender and blend on high speed. Till contents have the consistency of soup

  9. Serve your asparagus soup with 1 tsp of extra virgin olive oil or ghee, some garlic bread (See Recipe) and Love
