How do I make it?
-
Dice the onions, garlic and tomatoes
-
Take a pan and pour 2 tbsp of olive oil. Keep the pan on medium heat
-
Add onions and garlic, sautee on medium flame till they are golden. Also add salt and pepper
-
Now add tomatoes and sautee till they lose all of the water and become like a paste (about 15-20 mins). Stir every 5- 10 mins
-
Finally add oregano, basil, crushed red pepper and stir well. Turn the heat off
-
Let the pan and its contents cool down
-
Take the contents of the pan and put them in a blender. Blend on high for a couple of minutes till it becomes like a sauce
-
Pour the sauce back into the pan and add coconut milk
-
Simmer the soup in the pan on medium-low for 10 mins with lid on
-
Serve your tomato soup with fresh baked bread (See Recipe) and Love.
