How do I make it?

Soak the dried coconut flakes in coconut milk for 1 hour
-
When the hour is up, squeeze 1 cup of coconut milk out of the mixture. You can keep that coconut milk for use in another recipe or for use in the frosting

Preheat oven to 350F.

Line a cakepan with parchment paper

Set the drained coconut aside while you work on the batter.

Melt the butter in microwave
-
Mix the butter, sugar (or sugar replacement), eggs, vanilla in a mixer on medium speed for 2 minutes .Scrape down the sides of the mixer

Add the protein powder and coconut flour and beat on medium-high for 2 mins
-
In the end just add the coconut from step 5 and mix well. Do not blend in the mixer
-
Pour the mixture in to the lined pan and use a spatula or spoon to spread it in to an even layer
-
Now prepare the chocolate layer by following the same steps from step 6-10 with the addition of cocoa powder. Add cocoa powder in step 7 to the mixer

Bake both the cakes for 30 mins. You should be able to stick a toothpick in the center and pull it out clean when it's ready

While it is baking, we can prepare the frosting
-
Mix coconut milk, softened cream cheese, sugar and vanilla in a blender for 2 mins
-
Once the 2 layers are ready, pour espresso only on the chocolate layer
-
Leave both the layers outside for at least2 hours
-
Before your put the frosting on the cake, let the cake cool down completely
-
I prefer to trim the sides of the cake to make the cake evenly shaped
-
Now start with chocolate layer, spread about 1/2 inch of frosting, then layer the vanilla cake and add another inch of frosting
-
If you wish you can also apply some frosting on the sides of the cake. For that you might need to make more frosting. Follow the same recipe (step 14) in term of proportion to make your frosting.

Finely take some cocoa powder in a strainer and sprinkle some on the top of the cake

If you would like to make some design on the cake, take a zip lock.

Make some additional frosting using the frosting recipe from above - step 14

Add the frosting into the zip lock and seal the lock.

Now cut a small chunk of one of the corners of the zip lock to make a hole for the frosting.

Put some pressure on the top and make your own designs on the cake
