Use a zucchini noodle maker to make your noodles

Steam noodles in a pan for 10 mins to make them a little soft yet crispy

Take them out in bowl.

Slice the onions and green peppers along the length. Grate the ginger and finely dice the garlic
-
Take a pan and heat some avocado oil in it. Keep the pan on medium heat

Add onions and green peppers and sautee on medium flame till they are golden. Also add salt and pepper
-
While the veggies are getting toasted, take a bowl and add soy sauce, rice vinegar, chilli pepper flakes, grated ginger and chopped garlic and mix well
-
Add the mixture from last step to the pan and cook on medium for 5 mins
