How do I make it?

Finely dice the onions, green peppers, tomatoes and green chillies

Take a pan and melt 1 tbsp ghee. Keep the pan on medium heat

Add cumin seeds,fennel seeds, coriander seeds and caraway seeds to the pan and wait till you can smell the aroma of the spices

Now add onions and sautee till they turn golden brown. Keep the flame a medium

In the meantime blend the ginger and garlic into a paste. Don’t discard the blender container we will be blending the tomatoes in it next

Once the onions are done add ginger garlic and sautee for about 3 mins

Blend the tomatoes in the blender to make a puree
-
Add tomatoes and cook till the tomatoes lose all of the water. This is a critical step, make sure all of the water evapourates from tomatoes before you move to the next step. Your tomatoes will become like a thick paste when they are done

Add peas and green pepper and cook for 10 mins

Finally add turmeric, salt, and garam masala or all spice powder and stir well. Keep the flame at low and cook for 5 mins

In the meantime roughly dice the avocado

Add the avocado to the pan and mash it with the gravy. Cook on medium flame for 10 mins with lid on
