How do I make it?
-
Dice the onions and garlic
-
Take a deep pan and melt 1 tbsp of ghee on medium flame
-
Sautee the onions in the pan till they turn a little brown. This would take about 5 mins. Then add garlic and cook till they are fragrant - about 3-4 mins
-
In the meantime, wash the broccoli well. Chop them into small florets. I also end up using the 1 inch of the stem from the base of florets. They have a lot of minerals and vitamins
-
Now add the broccoli, salt and pepper to the pan from step 3 and mix well. Keep the flame medium-low and cover the pan with lid
-
Keep stirring and cooking till your broccoli gets cooked and super soft. If the mixture gets too dry add 2 tbsp of water and cover with lid to cook
-
Once cooked turn the flame off and let the content of the pan cool down completely
-
Move the contents into a blender and blend on high speed. Till contents have the consistency of soup
-
Serve your broccoli soup with 1 tsp of extra virgn olive oil or ghee and some Love
