How do I make it?
-
Dice the onions and garlic
-
Take a pan and melt 1 tbsp of ghee on medium flame
-
Sautee the onions in the pan till they turn a little brown. This would take about 5 mins. Then add garlic and cook till they are fragrant - about 3-4 mins
-
In the meantime, wash the collard greens well. Cut along the stem in the center and discard the stem. Gather a bunch of leaves together and further chop them into 1 inch wide ribbons
-
Now add the collard greens, salt and pepper to the pan from step 3 and mix well. Keep the flame medium-low and cover the pan with lid
-
Keep stirring and cooking till your collard greens wilt and are soft. Collard greens take time to cook. If the mixture gets too dry add a 2 tbsp of water and cover with lid to cook
