How do I make it?

Take a pan and pour 1/2 tbsp of avocado oil. Keep the flame on medium

Add onions and green peppers and sautee till they turn a little brown

Now add mushrooms and sautee till they are cooked

Preheat the oven to 350F

In the meantime whisk together the eggs in a bowl with salt and pepper

Take a muffin tray and pour equal amounts of the whisked eggs into 3 of the muffin cups
-
To the first one add the sauteed veggies, to the second drop the mozzarella slice and add olives and to the third one add spinach and sun dried tomatoes
-
Bake for about 15 -20 mins

Your egg muffins are done when the eggs leaves the sides and if dipped, a fork comes out clean
